Well to be honest some anime series are perfect just because they ended. Like kanon *2006* and/or elfen lied. I wouldn't like them if they kept going for ever..
So my choise goes automaticly to anime with some fighting action so here it goes.

3# Full metal Panic/fumoffu
4# Full metal alchemist
5# Dont forget about H e n t a i :)

Theres no way I can only watch one....or three for the rest of my life. If I tried that I would go crazy after a few years. But I guess if it came down to it I would choose the longest series, which would be Crayon Shin-chan, One Piece and I guess Naruto.
